Sabudana, the pearls this dish is built on, aren’t actually a grain at all, they’re processed tapioca starch, extracted from the cassava root. Cassava itself isn’t native to India; it arrived via Portuguese traders and was established as a crop in parts of South India by the colonial era, with Tamil Nadu, particularly the Salem region, becoming the country’s main sabudana-processing hub. Because it’s technically not a grain, sabudana fits the dietary rules of Hindu fasting days (vrat or upvas), and khichdi made from it became one of the most common fasting-day dishes across Maharashtra and much of India, especially during Navratri and Ekadashi.

  • साबुदाणा (सागो मोती) 1 कप (180-200 ग्रॅ)
  • भिजविण्यासाठी पाणी 3/4 कप
  • कच्ची शेंगदाणे, भाजलेली व चिरलेली 1/2 कप
  • आलू, उकडलेला व चौकोनी कापलेला 1 मध्यम
  • तूप 3 टेबलस्पून
  • जिरे 1 टीस्पून
  • हिरवी मिरची, बारीक चिरलेली 2-3
  • करी पत्ता 8-10
  • साखर 1-2 टीस्पून
  • लिंबाचा रस 1-2 टीस्पून
  • हिमाचं मीठ (सेंधं मीठ) चवीनुसार
  • धनिया पत्ता, बारीक चिरलेला 2 टेबलस्पून
