कहानी

Sabudana, the pearls this dish is built on, aren’t actually a grain at all, they’re processed tapioca starch, extracted from the cassava root. Cassava itself isn’t native to India; it arrived via Portuguese traders and was established as a crop in parts of South India by the colonial era, with Tamil Nadu, particularly the Salem region, becoming the country’s main sabudana-processing hub. Because it’s technically not a grain, sabudana fits the dietary rules of Hindu fasting days (vrat or upvas), and khichdi made from it became one of the most common fasting-day dishes across Maharashtra and much of India, especially during Navratri and Ekadashi.

  • साबूदाना (सागो मोती) 1 कप (180-200 g)
  • भिगोने के लिए पानी 3/4 कप
  • कच्ची मूंगफली, भुनी और कुचली हुई 1/2 कप
  • आलू, उबला और क्यूब किया हुआ 1 मध्यम
  • घी 3 टेबलस्पून
  • जीरा 1 चम्मच
  • हरी मिर्च, कटी हुई 2-3
  • करी पत्ता 8-10
  • चीनी 1-2 चम्मच
  • नींबू का रस 1-2 चम्मच
  • सेंधा नमक स्वाद अनुसार
  • धनिया पत्ता, कटा हुआ 2 टेबलस्पून
