Poha
The Story
Poha is one of India’s most beloved breakfasts — light, quick, and endlessly
comforting. Made from flattened rice tossed with mustard seeds, peanuts, and
a squeeze of lemon, it’s the kind of dish that comes together in fifteen
minutes but tastes like it took much longer. A staple in Maharashtrian
homes, it’s often the first thing cooked in the morning.
- Flattened rice (poha) 2 cups
- Onion 1, finely chopped
- Green chili 2, chopped
- Mustard seeds 1 tsp
- Curry leaves 8-10
- Peanuts 2 tbsp
- Turmeric powder 1/2 tsp
- Lemon juice 1 tbsp
- Oil 2 tbsp
- Salt to taste
- Coriander leaves for garnish

Rinse poha in a colander under running water until soft, then drain and set aside.

Heat oil in a pan, add mustard seeds and let them splutter.

Add curry leaves, peanuts, and green chilies, saute for a minute.

Add chopped onion and cook until translucent.

Add turmeric powder and salt, mix well.

Add the soaked poha and toss gently until evenly coated and heated through.

Squeeze lemon juice over the top and garnish with coriander leaves before serving.
